Tim Armstrong is founder of Eat You rYard Jax, a Non-profit Edible plant nursery and education center on the west side of Jacksonville. He is a graduate of Will Allen’s Commercial Urban Agriculture program 2011 from “Growing Power”. He is a past recipient of Hands on Jacksonville’s “Hands on Earth Award”. He has received mushroom training at Growing Power, Mushroom Mountain and UF’s -Research station. He has gownmushrooms at his 46 acre farm since 2011. Eatyouryardjax has a “YouTube” channel where Tim shares information on growing edible plants and you can take a virtual tour of the farm. Meet Our Guest Instructors for Bamboo & Mushrooms

Shanti: Bamboo Specialist 


"Health and wellness should be available to all people and the massive potential availability of bamboos along with their high mineral content allow them to play a social equalizing role – knowledge of how to use them being the key, that is my job."


Shanti is a pioneering bamboo specialist whose work with the versatile plant dates back to the mid-90’s. Her career took a significant turn when she moved to Florida to join Walt Disney Imagineering as their bamboo and ornamental grass specialist for the Animal Kingdom Project. Following this major endeavor, Shanti established her own farm, deepening her connection to bamboo.

Driven by an interest in the medicinal potential of bamboo, Shanti founded Bamboo Leaf Tea in 2008, pioneering the use of bamboos for teas and supplements. She has since become a globally-recognized bamboo nutraceutical specialist, utilizing all parts of the plant to create natural medicines. Shanti travels the world to speak on this topic, passionately promoting the use of bamboo for health and wellness.


Expertise and Offerings

Beyond nutraceuticals, Shanti's work encompasses a wide range of bamboo applications:

 * Growing and Installation: Expertly cultivating and installing bamboo for diverse purposes including windbreaks, silvopasture, privacy screens, construction, biomass, medicine, and food.

 * Education: Teaching at retreat centers, schools, and events on the practical uses of bamboos and how to best integrate them into permaculture, regenerative agriculture, and agroforestry systems.

 * Immersive Experiences: Facilitating collaborative immersive bamboo experiences at major festivals such as EDC and Okeechobee, blending art and nature.  As well as being the facilitator of the Florida Permaculture Convergence her flagship annual event.
